Kudos for fessing up to Corrado self destruction. Yes retaping up a harness every few years is a good call, one it keeps things clean and two you notice small important details.

On a dark color car, only if blacked out is your desire.
If you want to keep it simple use one of the VW silver colors for the corrado, maybe something you can get touch up paint for.
It has a modest performance gain but it's kind of like comparing an autotech strut bar and an Eibach bar. For some the Eibach is the uber desirable.

The long black plastic part on/in the transmission will unbolt from the speedo cable, you just need two wrenches. You can do it in the car out of the car.

I agree, I don't know how they could do the 11.3 upgrade without using 11.3 pads. If by chance they did manage this make certain you install new rotors with the new pads.
