That service is for engine swaps, or when you're swapping ecus between cars.

Seems i'm going to be that guy, but i've used this method 5 times and counting:
After each pull the vac run the engine was stronger and stronger....
Is it a Bosch sensor?
If so, check the bentley for the coolant temp resistor readings, they're the same.
If its a different sensor, it'll be a different resistance value table.
Ohm test the temp sender, or change the oil and put a larger filter on and note if there are differences in temps.

Edit: got a parts car
The light will blink on the dash, thats it...
The RFID and etc is used to ident the key and auth the immo, if the ecu is defeated, a laser cut screwdriver will start the car.
I'm running a AWP with Mk3 ABA engine mounts, Was a K03S like you've pictured, with a 3" downpipe.
The stocker also fits too.
