A bad coolant temp sensor usually causes a starting problem, not what you describe.
There is level sensor in the overflow tank though that should be an easy check.

In the thread i referenced in my last post, the problem turned out to be a faulty ignition coil. I would check for spark at the spark plug using a long screwdriver the next time this problem occurs.
