Here's an easy, delicious vegetarian dinner idea:
3/4 # spaghetti, cooked, drained and rinsed with cold water
1 package frozen chopped spinach, thawed
1/2 # grated Monterey Jack cheese
1/2 # grated Mozzarella cheese
8 oz. sour cream
salt, pepper, Italian spices to taste
grated Parmesan cheese for the top
Mix all ingredients with your hands in a large bowl. Place into a 13 x 9 baking pan, top with Parmesan cheese, and cover with aluminum foil. Bake at 350 for 45 minutes; remove foil and continue baking for another five minutes. Cut squares of casserole; serve topped with Marinara sauce, with garlic bread and salad on the side. Enjoy!
This freezes well and leftovers are easily microwaved.
