Something that my dad used to refer to as hors d'oeuvres when we were growing up; they are sort of like chilaquiles.
I don't fry the tortillas in oil and I use flour rather than corn tortillas. I just let them get a little color and crisp a bit in a nonstick pan with some butter. When the tortillas reach that stage you scramble some eggs in the pan. I topped mine with a little shredded Mexican blend cheese and a healthy portion of El Pato.
made some home made biscuits. and put some turkey bacon and egg inside.... YUM!
