    That sounds SO good.

I used to work at a wing place that started in New Orleans and we served red beans and rice. If that place hadn't gone out of business I'd pick some up for dinner.

It's easy to make. It was made by a friend from NO. She does it in a crock pot and it's tasty. Hamhocks, sausage, and beans cooked for hours, then served over rice. With Tabasco, of course.

Oooh! What is in breakfast casserole? Sounds good just based on the name.

    WHATEVER YOU WANT!

Eggs,Sausage,Bacon,Cheese, Those little frozen hash-rounds (that's the easy way, but you can mix in homemade potatos if you like), Cheese, Bacon.

I like to add green peppers but my wife made this one. I top it sometimes with salsa or hot sauce(Franks, of course).

There are some pretty good recipes on the intarwebs, and it is very easy to make and modify to your own taste.

Spinach salad with walnuts and balsamic.

    Turned out pretty good.
