If youre at the point of no return, and youre in an arc-slide like that, if you DONT have ABS, slam on the brakes and lock up all four tires.
This will keep the car sliding in a straight line, instead of it arcing towards the barrier.
Again, this will only work if your car doesnt have ABS.

No sudden or sharp movements. He chopped off the throttle abruptly and then violently began to "saw" the wheel.
What he should have done is keep the back tires spinning while counter steering and gently easing off the throttle while inputting equal amounts of reduction in counter steer to ease the car back straight.

The short answer is not sharply lift the throttle, and make timely inputs. Basically, when a car starts to oversteer, you want to make a quick and accurate steering correction, not let the slide develop, lift and make a sharp input.
When oversteering, look where you want to go, slowly come off the pedals, and make a steering input that keeps the front tires pointed straight down the road. Feedback through the wheel will also let you know if you need more or less steering. Once the yaw rate isn't getting worse (you've caught the slide), momentarily pause your inputs, then as the car recovers from the slide, get your steering input out.

Skip Barber guys call it CPR for your car. Gotta warn you though, you should learn it on a skid pad, not on the track for the first time. You'll get it wrong for awhile until you practice it enough.
Adam is right though about leaving the gas in, but that's for people who have the amount of car control required to get out of that situation. When you're learning, the best thing to remember is "if in doubt, both feet out." Later, when your car control improves, you can change it to "if in doubt, flat out."

Short of someone taking you out or losing grip due to bad track conditions I don't know how the hell anyone goes off the track...
I must just be a big *****, but I don't think I have ever put my car in the position to shunt the armco.
