So I also would like to create a thread dedicated to what I cook, feel free to ask any questions or post opinions regarding recipes etc.

Last night for dinner was a Butterflied Leg of Lamb done on the BBQ, I also made foil pack BBQ potatoes.

    Marinate for the Lamb was

(Grown in my backyard) - Chervil, Thyme, Rosemary. also in addition, olive oil, generous amount of salt, pepper and olive oil, slather and allow to bathe for about 2 hours, then bring to room temp before grilling

    Pictures for the masses

    h

    Lunch today was simple -

    Homemade Italian Wedding Soup

Boiled Yukon Golds with Hawaiian Black & Red Sea Salt.

Like everything, but the meat on the first post is a little too rare for me.

I love the bagels and lox idea. I miss NYC bagels.

heh, i love my meat rare, id eat it raw if it were plausible,

todays dinner was if you saw from an earlier thread i created, Burritos!

i took the left over leg of lamb (yes the super rare stuff) and chicken marinated it in Badilla Mojo,

    made my own salsa verde,

took guac, sour cream, my left over new orleans dirty rice, added a can of black beans, got some 4 cheese mexican blend cheese, and Mission whole wheat wraps, (honestly they tasted great, cant even tell they are whole wheat other than the color)

    and here is the outcome

enjoy the pics and as usual any and all comments/suggestions or questions are appreciated!

So this morning I got the itch for some grilled burgers, but no ordinary burger will do..

    follow the pictures

Seasoned with Worchester, Sea Salt, Fresh black pepper and.... a couple of teaspoonfuls of left over bacon grease (made bacon this morning)

Formed into patties, put on a cookie sheet, the whole thing will now go in the freezer to set up until dinner

oh and my wife got hungry for lunch so I made her a Roast beef "Caprese" sandwich. Ingredients as follows

    Dietz & Watson London Broil
    Belaggio Provolone Cheese
    Basil
    on the vine tomatoes

so the wife was off today and so was I, we planned on hitting the beach in the morning, the mall in the afternoon (kids needed clothes and she had $80.00 in gap rewards to spend) and then we were to grab some lunch.

well it turns out that we never made it to the beach mainly because of the raw sewage scare, so we hit up two malls and went to this place called Houstons by Roosevelt Field Mall in Garden City/Westbury New York for lunch.

The main reason for wanting to visit the beach

My wife decided on a Tuna Sashmi Salad, while I had the French Dip Au Jus.... the shoestring fries were insanely good and my daughter had chicken fingers with Parmesan broccoli.

    enjoy the pictures!

The bill was about $95.00...... yeah it was a bit pricey but so worth it!

oh and my wife did some damage at the GAP.

this is the actual receipt we got... i kid you not its about 3-4 feet long

    enjoy!

I like my skin super crispy, even slightly burnt for that nice BBQ charred taste

served up with spanish style rice and mixed veggies

Today was a healthly breakfast burrito. It came in at less than 200 calories!! Not too shabby :-) add the 6 grams of fiber and about 45 grams of protein as well as a decent amount of calcium and it's a pretty well rounded breakfast! Enjoy the picture!

So today I made blueberry pancakes, I did some grilled salmon with a sour cream dill sauce but forgot to take pictures. Pancakes came out great although I personally do not eat them (my wife and daughter love them) best part is I wake up at 6:30 roll out of bed and make my way downstairs for about 6:36/6:40. Cook her and my daughter breakfast (usually leave it warming in the oven) and am out the door by 7:00am. Today I manage to make pancakes, pack her lunch and make myself a low fat egg substitute burrito. All within 20 minutes. And I didn't just make 2-4 I must have made about 10-14 of them :-) enjoy the pictures!

so if you haven't already seen, my wife is a HUGE fan of chicken, its chicken this, chicken that.... i get a bit sick of it after awhile so i always try to find new ways to make chicken, this time I marinated it a bit different, used some soy, adobo seasoning, garlic powder, and a few other things in my arsenal and roasted the whole damn thing on the BBQ again, (its really not hard, and much easier than running an oven in your house with 92 degree weather)

i also made creamed spinach enjoy!

    thanks for the positive reviews!

Last night made some pasta and homemade sauce, for the sauce i used some chicken, feta and spinach sausage, cooked in the sauce, then cut them up into chunks and threw em back into the sauce. pasta was one of those enriched white pastas, which is even better than a wholegrain pasta, lots of vitamins and fiber in a white pasta?! its a win-win! made a mixed baby greens salad, and used some of my own yellow heirloom tomatoes, cut in some israeli cucumbers and voila!

    Home grown Heirlooms delicious flavor!

    Salad.

Strawberries were on sale at the supermarket so i went a little crazy, came home with 6 cartons my daughter loves these things

    Dinner is served

My 4 month old son is transitioning to baby foods, so I make him homemade organic peas and we're good to go!
    Blanched, and then pureed

Breakfast this morning was healthy, a half of a burrito, 2 strips of turkey bacon, and fat free cheddar.

it may sound blah, but honestly ive gotten used to it and it tastes delicious, plus at about 200 calories, its worth it!

    half a wrap 110 k/cal
    1 serving of cheddar 45k/cal
    2 strips turkey bacon 30k/cal
    egg substitue 30k/cal
    grand total of 225k/cal
