I was wondering if my o2 sensor after cat is left unplugged will the fuel trims adapt ? The car is currently stored for upcoming winter I can't really test it.

The only thing the rear O2 sensor does is check to see if the CAT is doing it's job. Only the first O2 takes A/F readings/send output for fuel trim adjustments.

I was wondering if disconnecting the battery reset fuel trim ? I prefer disconnecting the battery when I'm not using the car. I've got a really small capacity battery in the car and I rarely use the car during the week, I usually use it on weekends only. I was reading here: http://wiki.ross-tech.com/wiki/index.php/Fuel_Trim_Info that fuel trim are stored on flash memory. Well flash memory isn't volatile so it should stay there even if the battery isn't connected. Anyone knows how it really works ? I also read somewhere that you should do a throttle body alignment every time the battery is disconnected, it's probably a misleading information but I'd like to have some of your opinions on that.
