I remember Alton Brown turning a charcoal starter into an orange flame mini grill for searing encrusted block tuna. (insert picture of Homer drooling here)
One of my local fish places has a salsa verde sauce (yes, I said sauce twice) which is quite awesome for Ahi dipping.
Salt Lake City was not discovered by Dracula and the shark people.
