Has anyone come Across a good video or such explaining the replacement of Engine Mounts. I have a 2004 Passat TDI. Any help would be greatly appreciated!!

Are the mounts leaking fluid leaving red stains on the brackets? New mounts on diesels do make a difference if your old ones are bad and they usually are after 100k+ miles.
Do not rule out driveshafts if you are getting a bad shake at idle.
You just need to use a block of wood to jack engine carefully enough to slide the mounts out. Straight forward job easily done on jack stands. Loosen bolts before raising engine. Change one mount at a time.
