I want to chip my Touareg primarily for better fuel economy.Any suggestions on which chip to use?

if you're serious about adding power to the v10 you'd want to contact CustomSpooling (they now have an American vendor) or Malone. I have done a ton of researched on both & they offer what I feel to be the best customer support.
